  3. Whip the Egg Whites: While the sugar mixture is cooking, beat the egg whites and salt in a stand mixer until stiff peaks form.
  4. Combine the Mixtures: Once the sugar mixture reaches 300°F, remove it from the heat. With the mixer running on low speed, slowly pour the hot sugar syrup into the beaten egg whites. Be careful to avoid splattering. Increase the mixer speed to high and beat until the mixture is thick and glossy.
  5. Add Vanilla and Nuts: Beat in the vanilla extract, then fold in the roasted nuts.
  6. Shape the Nougat: Quickly transfer the nougat mixture to the prepared pan, spreading it evenly. If using parchment paper, place another sheet on top and press down to smooth the surface. Let it cool completely at room temperature.
  7. Cut and Serve: Once cooled, remove the top layer of parchment paper (if used) and cut the nougat into desired shapes. Store in an airtight container.
